Roasted Garlic Mashed Potatoes

To go along with the lovely meatloaf below I made mashed potatoes. In my opinion, nothing goes better with meat loaf than mashed potatoes. I love roasting garlic first before adding it to the potatoes, it gives them so much more depth. And using yukon gold's are a must, they make the best mashed potatoes.


Roasted Garlic Mashed Potatoes
3 large garlic cloves
1/2 tsp. olive oil
3 large yukon gold potatoes (about 2lbs.)
1/2 cup half and half (warm)
2 Tbs. unsalted butter
1 1/2 tsp. salt
1 tsp. fresh gound pepper

Heat oven to 375
Peel skin off garlic put in a small oven safe dish and add oil. mix together, making sure all sides are covered. Cover dish and roast in oven for 30-40 minutes or until browned.

Peel potatoes and cut in large chunks. place in a large pot of salted, boiling water and boil until fork tender. Drain and add them back to pot. Add roasted garlic, and the rest of the ingredients and either mix with electric mixer or mash with you masher.

mmmm, i love roasted garlic mashed potatoes! i like your technique of roasting the garlic; less messy than others i have tried

NOTHING is better than a big serving of mashed potatoes. EXCEPT for when they are roasted garlic mashed potatoes. Freaking yummy!! :)
